SUMMER SQUASH RICE
We love this rice. I look forward to zucchini and crookneck squash all year so I can make this.
1 cup chopped carrots
1/4 cup chopped onion
1 Tablespoon butter
1 can chicken broth
3/4 cup uncooked long grain rice
1/4 tsp. salt
1/4 tsp. pepper
1 medium yellow summer squash, chopped
1 medium zucchini, chopped
In a saucepan cook carrots and onion in butter until slightly tender. Stir in the broth rice, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 13 minutes. Stir in the yellow squash and zucchini. Cover and simmer 6-10 minutes longer or until rice and vegetables are tender. yield: 6 servings.
NOTE: I use a rice cooker to make this. After I cook the carrots and onion on the stove, I add them to the rice cooker pot with the rice, broth, salt and pepper. Start the rice cooker and let cook for 30 minutes. Add the yellow squash and zucchini then continue to cook until the rice and vegetables are tender, about 10 minutes longer.

Here are some pictures from the past month. Why does summer go by so fast?

Here is the group. Brother-in-law Doug, my sisters Karen and Shanna, me, Elisa ( my neighbor and Karen's co-worker/friend), Andrea (Karen's friend) and Andrea's sister.
Almost done with the Freedom Run 15K in Hyrum. As predicted, I came in 10 minutes later than my sisters. Oh well, I guess it is only right that my hip should hurt at my age. (That is my excuse this year) I was a nice run, mostly down hill.

Mom didn't run, but she and Dad were nice to cheer us on.
Then we went to Tony's Grove to hike around the lake since a 9-mile run wasn't enough exercise.

Jarom's 11th birthday. We had Toy Story alien cupcakes. They were so fun to make. Chocolate cupcakes and mint frosting. The ears are peppermint leaves from my herb garden. The eyes are white icing, and the pupils are melted chocolate dabbed on with a toothpick. The horn/antanae? is a green birthday candle, and I used upside down chocolate chips for some of the mouths.
Our town celebration was fun. We watched fireworks, Josh and Jarom ran in the race. Josh took first place in the mile run. Uncle Doug took first place in the 5K. Phil helped with the computer stuff for the race. Jarom and I were in the parade with the Primary. We rode in a boat, a "boat float." Our theme was "Oh What Do You Do In The Summer Time?"
It has been a busy full month. I started doing some medical transcription again and feel pretty worn out trying to get used to the schedule of waking at 5:00. It would help if I didn't go to bed at midnight. It is getting easier though, and I like the work if I just do it 2 or 3 days a week.
